The first thing that probably springs to your mind about our amazing Bread Bakery is that you've never seen anything quite like it. And you're right, you haven't--because we've created the first fully automated, bread-baking machine in the world.

It measures. It mixes. It kneads. It forms. It proofs. It bakes. Forty loaves per hour and 96 minutes from dry mix to baked loaf--with two varieties baking simultaneously. Each loaf is created separately, in a single batch, and the whole process is fully visible, from start to finish. More than forty years after the idea was first conceived in the mind of a 15-year-old boy, our Bread Bakery is redefining what the term "fresh bread" means.

In the world of grocery store bread, our Bread Bakery is most notable for the new possibilities its technology creates, including:

  • Truly local. Buying local and supporting community business is important to customers--and to us. We hire local people to run the machine, and of course our bread is as local as it gets.
  • Freshness redefined. Bread advertised as "fresh" often comes from a frozen dough that's made who-knows-where-or-when. Not ours. There's a big difference between "fresh" and Wilkinson-fresh.
  • No artificial preservatives. Because our bread doesn't get shipped and is sold same-day, we're able to make it with a "clean label", meaning without artificial preservatives or chemicals.
  • Single batch process. Each loaf is mixed separately, not cut from a giant ball of pre-made dough like a lot of bread that's mass-produced.
  • Environmentally responsible. Using biodegradable bags and not trucking our bread across the country means we have a far smaller carbon footprint than national brands.
  • Educational and fun. Parents may never have to answer another question about how bread is made and where it comes from--they'll just point their children in the direction of our Bread Bakery. But our apologies if grocery shopping with the family takes a little longer now.
